SERVES 2-3
For the apple cider syrup
500mL Mr Finch Lower Sugar Apple Cider
1 cup brown sugar
2 apples, cored and cut into chunks
Small handful torn mint leaves
For the drink
2 tablespoons freshly squeezed lime juice
90mL white rum
60mL apple cider syrup
Soda Water
Ice
For garnish, fresh apple slices and fresh mint leaves
To make the apple cider syrup
In a saucepan, heat the cider, brown sugar and chopped apple and warm for 10 minutes. Be careful not to let it boil.
Remove the apple chunks, and then add the chopped mint leaves to the liquid. Leaving to infuse for 20 minutes.
Strain the liquid into a jug, so as to remove the mint leaves and leave to cool.
To make the mojito
Combine lime juice, rum and apple cider syrup into a cocktail shaker filled with ice. Shake and strain into two tall glasses, over ice. Top each glass with soda and garnish with mint and a slice of fresh apple. Enjoy!
