Harvesting

At Mr Finch, our cider is made with only the finest fruit, specially selected from orchards all across Australia. For the perfect balance of crisp, tart, and sweet, we harvest everything in the beautiful, golden light of autumn, when fruit is at its best and perfect for picking.

Pressing & Juicing

Once we’ve selected the most perfect pears and awesome apples, we spend time washing them to remove any sediment or pesky little bugs that might be lurking on the skin. After, the fruit is placed in a press to be squashed. This releases all the wonderful fruit juice that gives Mr Finch its distinct taste.

Fermentation & Storage

Once all the juice has been extracted from the fruit, yeast is added and the liquid is stored for fermentation. Fermentation takes approximately 11 days, during which time the sugar in the juice transforms into alcohol. After, the yeast is removed and the cider is ready for filtration.

Filtration & Blending

Once the juice has been transformed into alcohol, the team at Mr Finch work on filtering and blending the cider until the perfect balance of flavour has been achieved. This ensures that what you taste is the fullest expression of all the magnificent Australian fruit that goes into every drop of Mr Finch.

Packaging

After being poured into bottles and cans, Mr Finch is ready for distribution and finally ready to be enjoyed by people all over Australia. It’s a process that gives us great joy, and we hope you find even greater joy in drinking it. #AntlerTheCall
